Mom's Famous Banana Bread

The first time I tried this banana bread was in the middle of class in nursing school. A classmate (who eventually became my husband-must have been the bread) turned around and pulled the loaf out of his backpack and asked if I wanted to try some. Now that I think of it, I don’t think I took some that day because I was so taken off guard by the fact that he had a loaf of fresh baked banana bread in a ziplock bag in his backpack. But it wasn’t long before I had tried it. And it was always a favorite. For whatever reason, we all stopped making it. Maybe it’s because we had it ALL THE TIME. But since we’re all under quarantine at the moment, I figured now is the perfect time to get it back in our lives! 

Below you will find my mother-in-law Kathy’s recipe! Enjoy!

Ingredients: 

2-3 Ripe Bananas (riper the better!)

2 cups Flour

2 Eggs

1 cup Sugar 

3/4 cup Vegetable Oil

Dash of Cinnamon

Pinch of Nutmeg 

2 tsp Vanilla

1 cup Walnuts (chopped)

1/4 tsp Baking Powder

1/2 tsp Baking Soda

Directions: 

Preheat oven to 325 degrees F. Mix all ingredients together, adding baking soda and baking powder last. Pour mix into greased loaf pan. Bake for approx. 1 hour. 

At this point, we usually leave the bread in the oven for about 30-45 minutes with the oven off. This lets the inside finish cooking completely without over cooking the outside. Once you take it out, let it cool completely before serving! Bon Appétit!
